Should I use a thick rock (2-3") or a thin rock (.5 to 1") for a waterfall?

Do you mean for your spillway? What's rest of the waterfall/pond made out of?

The pond will have a three tier waterfall. The rest of the pond sides etc. will be made with regular fieldstone approx 3/4 to 1 inch thick.

If you use thick flagstone make sure you recess it in the ground so your water flows over it easily. Thin is easier to work with but depends on the look your going for.

Look does not matter as much as sound. I need a good, loud sound

Than you need to build a boulder waterfall. The flag gives you a sheet waterfall that is more mellow and has a higher pitched sound. If you build a rapid type boulder waterfall with a little more pressure it will give a louder deeper gurgling sound. The problem with that type waterfall is you get a lot more splash and greater evaporation. If posssible I always try to do both types.

Next question: 11 X 16 pond with a fall and maybe a spitter or two = what size (gph) pump?
Check out this link. It may be helpful. Aquascapes (http://www.aquascapes.com/getfaq.asp?ID=14)
There is a lot of info on aquascapes site on pond installs.
